Things my husband cooks for me: sausage and rapini pasta‏!

Have you ever eaten rapini? Also commonly known as broccoli rabe, it’s a delicious green vegetable that Italians eat often. It’s one of my all-time favourite vegetables; it’s just a little bitter, and it’s so simple to prepare. You can enjoy it steamed with olive oil, or lightly fried up with garlic. Delizioso!

One way my hubby likes to prepare rapini is in this very simple pasta dish. I have to mention that my hubby doesn’t normally like pasta. Let me tell you, it’s quite the conversation starter because he’s Italian. People will ask: “How did you marry an Italian who doesn’t like pasta?” Well, the truth is that the only way he enjoys pasta is when it’s served with some kind of meat sauce. (I long for my simple tomato and basil sauce, but I digress.) Anyway, he loves a good Bolognese sauce, or even spaghetti with meatballs. We both like this sausage and rapini dish because there’s the best of both worlds: veggie lovers and meat lovers will enjoy!



Sausage & rapini pasta

·         Boil water for pasta (we used penne, but you can use any short pasta)
·         Open up approximately 3 sausages (spicy or not, it’s up to you.) Fry up the seasoned minced meat and set it aside.
·         Wash and steam half a bundle of rapini. Slice the rapini leaves and stems into smaller pieces.
·         Cut up 4 medium-sized tomatoes into cubes.
·         Add rapini and tomatoes into the meat over medium heat, stir it up
·         You can add sliced up mushrooms if you like
·         Add a pinch of salt and crushed chili peppers
·         Mix it all in with cooked pasta...
·         Buon appetito!
